Where do you get the cacao beans?
I source all my beans from Meridian Cacao, a highly-respected direct trade cacoa importer based in Portland, Oregon.
Where do you ship?
I'm currently only shipping to North America, but I'm working on a global shipping policy soon.
What's the deal with the version numbers?
Each batch of chocolate I make is unique. Since the beginning, I've tracked my chocolate batches with "version" numbers. As I identify and develop flavours in each batch of cacao beans, I hone in on what I want to express and make some art to accompany the bars that I sell.
How long does your chocolate last?
Chocolate doesn't really go bad, but the cocoa fat structure slowly changes over time and loses its magical qualities. Since I don't include any preservatives, I recommend you eat it all within a few months.
Is it allergen-free?
My chocolate includes only pure cacao and cane sugar. I work hard to maintain a spotless environment at every step, but I do process other allergens (eggs, dairy, nuts, gluten) in the same facility.
